No Junk Jam

My daughter loves jam. I don’t love the long list of ingredients in most store bought varieties. I found this recipe on Pinterest well over a year ago and I haven’t looked back. It’s simple, quick, has no preservatives, additives or refined sugar, and it tastes great!

Because there are no preservatives, I’ll store one batch in several small containers and freeze the portions I’m not currently using. Although, if you have a big family and go through jam relatively quickly, you might just choose to store it all in the refrigerator.

Refrigerator Jam

1 + 1/3 cup of strawberries
(or berry of choice! We like using the frozen organic mixed berries found in our grocery store freezer aisle. Just be sure to thaw them first for easy blending)
2/3 cup rhubarb
2 Tbsp Honey
3 Tbsp Chia Seeds

Process all ingredients in a blender and refrigerate over night. The chia seeds will gel, thickening the fruit puree. Add additional diced fruit if you like a chunky jam.
