Egg-cellent Quiche

Generally speaking, most of the recipes I share are simple and quick. I’m not going to lie…this one is a little more time consuming in comparison. I mean, relatively speaking. It’s not Martha-Stewart spends a day in her apron kind of long. But definitely longer than most of my “I need something quick to throw together between helping the kid with homework, making school lunch, starting the bath and bedtime routine” options.

The good news is, it’s still very SIMPLE! Don’t let the lengthy description of steps fool you. Oh, and it’s worth the extra prep time. This is a yummy dish that could be served for dinner or earlier in the day as a nice brunch option. If you have less time than money, you can also save time by purchasing diced onions and already washed produce.

Egg-cellent Quiche

Crust

Heat oven to 350 degrees.

2 cups of Almond Flour
1/4 tsp of Sea Salt
2 tbsps of unsalted butter (melted)
1 egg

Mix all of these ingredients until blended. Use your hands to knead the dough into a well-mixed ball. Place dough in center of pie pan and work dough around to create¬†your crust (smooth dough up the sides of the pie pan and all around so you have a “shell” for your filling). Once this step is complete, place into the oven for approximately 10-15 minutes or until lightly browned.

While your crust is baking, you can begin on the filling:

PART ONE

Grease a large (preferably deep) frying pan. I happen to use Coconut oil cooking spray.

Slice sausages (find a brand with minimal processing and/or few ingredients. We enjoy Publix Premium Spinach and Feta Sausages) and cook until heated through.

While this is happening, cook up bacon until very crisp (to crumble for bacon bits). We use our microwave for this step, but choose the method that works for you. Or, purchase pre-cooked bacon bits.

Did you set the timer on that crust? How’s it looking? If done, just pull from oven and set aside.

Drop spinach (pre-washed bag of fresh spinach), diced onions, and mushrooms into your frying pan. Cook until veggies have softened.

Add in cherry tomatoes and above mentioned bacon bits. Saute until flavours are well-blended.

Add mixture to pie crust.

PART TWO

Beat three-four eggs in a separate bowl.

Add 1-2 tbsp of greek yogurt.

Add shredded cheeses of your choice to taste (we used 1 cup of sharp cheddar, 1/4 cup Parmesan).

Add pepper to taste (if not adding bacon bits in the filling, also add salt to taste).

Mix well and pour over filling in pie crust.

Place quiche in the oven for 30-35 minutes.
